Maison Ambroise: wine family vineyard in Premeaux-Prissey
Our wine estate is located in Premeaux-Prissey, next to Nuits Saint Georges, Maison Ambroise has been established in Burgundy for 5 generations. Passionate about growing vines, we work in a 100% natural and organic way, without synthetic products.

We grow emblematics burgundy grape varieties: Pinot Noir, Chardonnay and Aligoté.
A Family Story...
The origins of our wine estate date back to the 18th century with the cultivation of cereals, blackcurrants and vines. We specialized in wine in the early 1940s. In 1977, Bertrand and Martine (the daughter) took over the reins of the estate with an expansion of the vineyards from 12 to 17 hectares.
Today the family adventure continues with the help of the grandchildren, Ludivine and François.
We produce 20 different appellations on nearly 20 hectares in natural and environmentally friendly crops mainly in Premeaux-Prissey and Nuits-Saint-Georges.
We produce a wide range of wines (Regional, village, premier cru and grand cru appellations): like an example, Coteaux Bourguignons, Bourgogne Cote d'Or, Saint-Romain, Nuits-Saint-Georges and Corton Grand cru.
Organic wine growing from our terroir
To do this, we asked the vines to sink their roots deep into the Burgundian subsoil, either by plowing or by letting the grass grow in a reasoned and controlled way.
We stopped using chemicals, pesticides and synthetic fertilisers since years.
We want to give the priority to biodiversity. Our estate is certified "Haute Valeur Environnementale* (HVE)" meaning high environmental value certified since 2020.
We pratice sustainable agiculture and respective farming with passion.
That way, we grow high quality grapes making great wines. During harvest, we work only ripe fruits, in a perfect sanitary state.
We harvest exclusively by hand :
Our red grapes are carefully checked on a sorting table at the winery before being destemmed. Then, they are placed in tanks with temperature-regulation system, where the fermentation will takes place.
After the fermentation is done, we use our pneumatic-press to release the wine.
Our white grapes are sorted out, crushed and pressed in entire cluster to release the grape juice. The juice is then put in a tank where it will rest 24 to 48 hours for sedimentation. Afterthat the juice is put in oak barrels where the fermentation will takes place.
Our wines are aged in oak barrels between 10 and 18 months with more or less new wood depending on the appellations and the vintages characteristics.
After ageing, we bottle our wines with no fining and no filtration. A light filtration is processed on our white wines since we like brillant and clear white wines.
La vinification
Notre vendange s'effectue 100% à la main.
Un tri systématique des raisins rouges est fait à la cuverie afin de ne conserver que les baies mûres et saines.
La vinification et l'élevage de nos vins allient tradition et modernité avec notamment l'utilisation de la thermorégulation (contrôle des températures lors de la fermentation) et de pressoirs pneumatiques (pour une extraction délicate des jus).
Nous adaptons nos procédés de vinification aux appellations, mais aussi aux particularités des millésimes (Sécheresse, dérèglement climatique...).
Nous élevons nos vins en fûts de chêne durant 10 à 18 mois.
Nous possédons notre propre groupe d'embouteillage maitrisant ainsi toute la chaine de production de nos vins.
